Heidi's Vegan Marshmallows
4 tsp agar agar powder

1 cup of cold water
1 3/4 cups granulated sugar
3/4 cups of honey or corn syrup
1 tbl vanilla (or extract of your choice)
1/4 cup tapioca or potato starch
1/4 cup powdered sugar
Let the agar bloom in 1/2 cup water about 10 min.
Combine ½ cup cold water, 1¾ cup granulated sugar and ¾ cup corn syrup or honey in fairly large saucepan and bring to a boil, stir constantly until the mixture reads soft boil stage on a candy thermometer.
Heat agar-agar over medium heat and stir until agar-agar softens add the vanilla and make sure all is dissolved, spoon into mixer bowl.
With beaters on high speed, slowly pour hot sugar mixture onto agar-agar.
Beat on high speed for about 10 minutes until mixture forms stiff peaks,
pour into a pan lined with sprayed foil and let stand over night.
The next day
sift together tapioca starch and confectioner's sugar in bowl, sprinkle some on to a table top or large cutting board,
tip the pan of marshmallow out on the board and sprinkle some of the powdered sugar mix on top...carefully cut the mashmallows into squares with a sharp knife and toss in more powdered sugar and then store in an air tight container until ready to eat.
if for some reason these do not turn out stiff enough use as marshmallow fluff to top a cake or in a sandwich.
